Baon Series: Chicken Nuggets with Steam Veggies and Pork BBQ

          Preparing lunch for Raffy and Rhian is a challenge. Rhian prefers to have something fresh and healthy for lunch. For Raffy, I need to make sure he eats healthy -- not preparing baon for him means he needs to settle for a fastfood meal, which is quite unhealthy if eaten everyday.

          Every 4:00 AM or sometimes 3:00 AM, I wake up to prepare their baon while simultaneously cleaning the house before we all start work and school for the day.

          To make sure that their baon is ready in 30 minutes, I prepare the food every weekend. One of Rhian's favorite snack and baon is Chicken Nuggets. Instead of the store bought chicken nuggets, I make chicken nuggets at home. As for the equipment needed, it is a must to have a food processor.

          Here is our Homemade Chicken Nuggets recipe.

 Homemade Chicken Nuggets

Ingredients:

1/2 cup all-purpose flour
10 cloves garlic
salt and ground black pepper
2 boneless skinless chicken breasts
1 cup prepared breadcrumbs
2 egg yolk
egg whites from 2 eggs
1 cup vegetable oil
mixture of 1/2 cup flour and cornstarch

Procedure:
  1. Place the garlic in the food processor. Grind.
  2. Put in the flour, chicken, salt, pepper and 2 egg whites in the food processor, mix until a smooth paste is formed. 
  3. Prepare flour and cornstarch mixture, egg yolk mixture and breadcrumbs.
  4. Form square shapes from the chicken mixture. Dip in flour and cornstarch mixture, then the egg yolk mixture and finally the breadcrumbs mixture.
  5. Fry in hot oil until golden brown. 
Tips: You can store the nuggets in the freezer, just slightly fry the nuggets and store it in a container.

          For the Pork BBQ, we just marinate the pork using Mama Sita's BBQ Mix with Sprite. We store it in the fridge for future consumption. It can be grilled in a pan. 



To make it healthy, I steam seasonal vegetables and add it to there baon.

Pork Nilaga: All In One Weekend Dish


          We prefer to stay at home during weekends. We love spending time together in the dining table, sharing stories and laughing together.

          We only opt to eat out when we need to do a lot of errands during weekends.

          Staying at home for a meal is so much better since we can just snooze after. We also prefer to have a private and quiet family meal.

          Now let us cook one of our favorite weekend dish!


Ingredients:

1 kg. pork, cubed
5 garlic cloves
1 medium cabbage quartered
1 cup pechay
1 cup string beans
2 medium potatoes peeled and cubed
4 pieces ripe saba banana sliced in half crosswise
6 to 8 cups beef or pork broth
1 teaspoon whole peppercorn
Salt to taste
3 tablespoons cooking oil

Cooking Time!

  1. Heat the cooking oil in a pot. Saute the onion.
  2. Add the whole pepper corn.
  3. Put-in the pork. Cook until the color turns light brown (about 3 to 5 minutes).
  4. Pour-in the pork broth. Bring to a boil. Simmer for 45 to 60 minutes or until the pork becomes tender.
  5. Add the saba banana and potatoes. Stir and cook for 12 minutes.
  6. Put-in the cabbage, pechay and string beans. Add salt to taste. Stir. Cover and continue to cook for 3 minutes.
  7. Serve with a spicy fish sauce.
