Vegetarian Quest: Kangkong and Tofu Medly

For the longest time I have aimed to become 100% certified vegetarian, but due to time constraint, happy moments and some other good reasons to say yes for some meaty dishes I have to occasionally live up to my goal until now. Nevertheless, I still consider this aim an advantage. When the elements are in line, I go for a meatless dish.

For this weekend,  I have the time to go to the market for some fresh veggies and tofu – so we will have Kangkong (Water Spinach) and Tofu Medly.


Ingredients:

Kangkong
Tufo (fried)
White or Red Onion (thinly sliced)
Kikkoman Soy Sauce
Hot Peppers
Oil

Directions:

1.       Saute the kangkong in some oil
2.       Add the tofu, soy sauce and hot peppers
3.       Add some uncooked onion rings and hot peppers.



                                                It is a guilt free indulgence with hot rice.  :)

Weekend Merienda: White Pancit



We love bihon, my daughter loves it so much she have it for breakfast three times a week. For this weekend -- with some carrots, cabbage, chicken and pork liver, we quickly sautéed  – White Pancit.

We call it ‘White Pancit’ since we do not add some soy sauce to the pancit, without the soy sauce, the vegetable and meat flavors is purely blended with the bihon.  :)

Ingredients:
Bihon
Cabbage
Carrots
Pork Liver (can be omitted for vegetarians)
Chicken Liver
Pork, Shrimp or Beef Cubes (can be omitted for vegetarians)
Water
Oil

Directions:
*Saute the meat and vegetables.
*Add some water with the cubed broth. Bring to boil.
*Add the bihon, stir once the water is absorbed completely




Lunch Date at RJ's Bulalohan


                                                    
We are scheduled to pay our move in fees for our new home when we decided to go for a spontaneous couple date. After we settle the fees, my husband suggested we drop by RJ's Bulalohan for lunch.

My husband is one of the regular customers for RJ's -- inspite of my stringent reminders that he needs to retrain from eating fatty foods like Bulalo.

My husband ang his colleagues usually drop by the place for lunch after burning some calories from their  basketball game. Since he is restricted to eat Bulalo, my husband tries his best to hide his food escapade at RJ's Bulalohan. 

Unfortunately he always gets caught thru FB. A “lamon” mode post at FB is posted right after some food trip at RJ's.  

The food must be really good for my husband really insisted we have a quick lunch date at  RJ's that day.
.

        As anticipated my husband ordered their Bulalo Special. On the other hand I had some Ampalaya Con Carne to cut down the fat intake. They have a lot more to offer but since it was just the two of us we just ordered our favorite dishes.

Their Bulalo is really meaty and tender, it was not fatty at all. I guess that is the reason why my husband seems to support RJ's Bulalo. It may not be as perfect as Tagaytay's Bulalo, but it is the next best thing -- if you do not have the time to drive all the way to Tagaytay. The serving was very generous for 279.00 pesos. We are unable to finish the entire bowl as it is good for 3-4 persons. The broth was really beefy but it is never the same with eating Bulalo in Tagaytay – the hot broth is always at its best when it is eaten in a really breezy and cool place.

The highlight of course is the bulalo marrow which is best eaten with fish sauce and kalamansi. I must say it something to really crave for after an intense workout. As the marrow melts with the fish sauce and sourness of the kalamansi you would want to have more rice to really enjoy the Bulalo experience. :)

RJ's Bulalohan is a must place to visit. Aside from their Bulalo the other food that they offer is really good. Their Ampalaya con carne is not bitter at all. I love it so much,  I even cooked a replica of it a day after our RJ's Bulalo experience. Like the one at RJ's the bitterness is not traceable at all and the blend of the sweetness and saltiness of the sauce is just right. TThey also added in some bell peppers for that aromatic taste and tausi for the authentic taste. But what really made the dish complete is the tender beef strips in oyster sauce.

We were really satisfied after our meal. For desert and pasalubong we just bought some Dunkin Donuts which is just located outside of RJ's.

Happy Breakfast: Creamy Pesto Pasta


As early as 3:00 AM we are already up for hubby’s 6:00 AM work shift. Breakfast is taken along the way. What we have for this morning – Creamy Pesto Pasta. For the recipe:

Ingredients:
Basil          
Olive Oil
Cheese
Cream or Fresh Milk

Directions:
1.       Puree the basil and olive oil.
2.       Boil the pasta, then drain. Finally, add the basil and olive oil puree.

3.       Add in some cream and cheese.

The Hidden Beauty of Bolinao


                                  

                             




As a part of the preparation for this trip, my husband was oriented that the trip will be around three hours from our home (Binmaley). Also, it was expressed that the ride all the way to our destination may have a some bumps and humps. This is to set the expectation and avoid complaints along the way. :)

Our bags are packed with swimming gears and cooked food. For this trip we bought some inihaw na liempo and fried chicken. For seafood dishes, we are planning to just drop by the local market for some fresh catch. We always love the comfort our own home so we did not plan to spend an overnight stay. For this trip we took with us my senior parents.

Along the way my daughter seems to be a bit impatient. She is used to a 10 minute travel time from the house to the nearby beach, so she is really asking us every five minutes if we are already in the area.



           


On the way, we had in front of us a view of the high altitude terrain and and a lot of new resorts for those who would like to take a swimming break. We also passed by road markets filled with melons and watermelons. It is also a good activity along the way to memorize the town names before we reach Bolinao. Geographically, Bolinao is in the tip of Pangasinan. It verdantly blessed with mountains and blessed with marine life.

After the two hour driving escapade we passed by Alaminos, Pangasinan, the home of the famous Hundred Islands. We were tempted to take the right turn to drop by, but we decided to continue driving, we will have a separate trip to visit Hundred Islands.

After an hour, we arrived at Bolinao, Pangasinan. Our first itinerary is to visit St. James Church. In front of the church is the famous “binungey”. This delicacy/'kakanin” is filled with sticky rice cooked in bamboo. We will definitely grab some of it after we visit St James Church.


St James Church

The place is very serene and simple. You will really feel the rural ambiance and the simple life of the local folks. The aura of the place gives a sense of humility and appreciation on the simple and wonderful things that life has to offer.
              

The aura of the church is not grand, but is exudes purity and simplicity. If you plan on having a trip of solitude it would be best to visit this church as it gives a sense of serenity and appreciation on how simple life could be.
                    

The moment in St James Church is devoted for the expression of gratitude, guidance for safety and more life blessing. It was Christmas season when we had this trip – so it is timely as well to reflect on the year that it is about to end. Also, it is a way for us to positively look forward to the upcoming year ahead.

                   

After the solemn prayer in St James Church, we bought some 'binungey” for a a price of 3 for 100. We can smell how fresh the sticky rice inside the bamboo, and it is really very tempting.

                   


Inside the church, there are souvenir stores which is mostly visited by those who dropped by the church after the end of their escapade. For us we will shop for souvenir items by the end of our tour.


                      



The Travel to Patar, Bolinao

The road to Patar Bolinao is bumpy, along the way we passed by a lot of resorts. It would be best to be in an explorer mode during the trip.  Each resort offers a different view. Aside from the white sand beaches you will definitely find rustic rock formations. Since this is our first time, the idea of checking each resort for some pictures did not cross our mind – but this is highly recommended if you would like to maximize your trip to Bolinao. You may also use this opportunity to haggle for an overnight stay.

On the left side of the road going to Patar, Bolinao, there are caves to be explored, since our daughter is too young for such kind of adventure this is scheduled on our next visit.

Along the way we spoke to several locals and they told us to just continue driving until we reach the end of the road. Along  the way we saw the Bolinao lighthouse , we have scheduled to visit it before we head back home.

At the end of the long bumpy ride-- we finally reached Patar, Bolinao. It looks organized and there are a lot of tourist around.  The place remains to be untouched, therefore the available amenities in the area are catered for local tourist. On the contrary, amenities for a those who have traveled far for a longer stay in Bolinao is also available.

             

                        
Our estimated arrival time is around 12:00 PM – the sea breeze however feels like it is 9:00 AM in the morning. The vegetation regulates the temperature keeping the area suitable for a one whole day swimming escapade.

           


The beach is aligned with picnic huts with reasonable rental fees of around 100 pesos for the whole day. The sand is brownish white in color, but still it is good place to take memorable pictures.  

                   



Parking space is also available and the place is secured. Also, there are souvenir stores in the area but we are lucky to meet young kids who sells souvenir shells for only 5 pesos per piece. It was  a really good deal as the shops in the area sells the same kind of item for 50 pesos each.




                       


                       


                                        



We enjoyed bonding with the local kids. My husband grew up in a coastal area, it feels like the trip made him remember the happy memories of his childhood.   

The huts were spacious, we can even sleep and take a nap – even the table was so spacious it feels like we did not bring any food with us.


                 

Of course, swimming is our final take on this trip. Aside from a break from the usual gray sand in our own hometown beach we got to experience crystal clear water. You can even see fishes swimming around.

                 

                                              
                 

On our way back, we took a different road so we missed to take some shots in the Bolinao Lighthouse, this I think is an indication that we should go back to this place once again for a new experience.

To end the trip we dropped by Bani to get some watermelons and melons. These round and sweet fruits sold along the road is perfect for the Christmas season, so we also bought a lot with us to Manila.


                                  

                             

                    


It will take time before we decide to drive back to Bolinao. We might visit the place again someday when our daughter is ready to take more adventurous activities.

The Unfolding in Calayo Beach


Summer is everything for everybody. Even workaholics will find a way to get an excuse for an exclusive summer break. Batangas has always been the favorite destination for our team building, since it is near Manila and it offers a wide range of summer activities.


The team escapade was planned before the Holy Week, this is to give way for those who will take a break with their family during the long Holy Week vacation. 


For this year, the team wanted to have a more exclusive place for themselves, so they have choosen Calayo Beach, one of the undiscovered beach spot in Batangas. 


This team building is tagged as “The Unfolding of Self -Inhibitions”. Office workaholics devour and get drowned on their work loads – so this trip is planned to unfold their alter-ego.


To make the trip wholesome and complete, kids are allowed to come along to enjoy the gift of summer – swimming.

Call Time:



Unlike work, there are no memo's for late comers. The call time is around 4:00 AM, but the group patiently waited until 5:00 AM to get everyone on the bus. After all, the fun is never complete when someone is missing.


Enticing Temptation:

Along the way, enticing stop overs are experienced. The group passed by Sky Ranch and of course it is still not accessible at that time – the group got contented though to take pictures for memory keeps.



Also, one guy caught someone’s attention --- she even took a picture of him for keeps. J


Finally – The Destination:

The place was swarmed with vegetation and the place was just warm enough for a whole day swimming escapade. Of course, the group achieved what they wanted for this trip – exclusivity. The area is not highly marketed, thus the place was occupied exclusively by the team. To match the beauty of the view the muse of the group gave her killer pose to match the beauty of Calayo Beach.





The beach is built with the basic amenities, there are beach huts available to cater local tourist and visitors. Showers are also available to get the saltiness out after the whole day swimming by the beach. Beach huts are big enough to accommodate everybody for the one whole day affair.



The On-Site Preparation:

Of course any escapade is not complete without the star of the group. This trip triggered the unfolding of talents. It was discovered that one of our colleagues has an intense passion to be a chef. Originally, the plan was to cook “dinakdakan” (local kilawin dish) on site, but due to some alcohol intoxication the recipe was transformed into something unique – “Nilasing na Baboy sa Suka at Luya” . For this escapade, this is the centerpiece. It will surely be remembered.




The Unfolding:

While the kids enjoys the sun and the sea. The not so grown up adults started to unfold their alter ego's. The fashionista's adorned the beach with their outfit for the day and the guys started to bond over some bottle of liquors. Of course, everybody gets to enjoy each others company until the sun started to set to end the day.

The Historical Day Tour in Lingayen


My husband is a tourist in my hometown, nevertheless his love for me may have made him love the place as well. This may not be true as there are a lot of things to like and remember each time we head back home.

For this trip I will tour him around Lingayen. Pangasinan. If my memory serves me correct, my Dad used to take me to play around the area and also to check the old planes which was preserved as a memoir of World Way II. This three hour tour are bits and pieces of the past, a view of the present and a peak on the promising tomorrow.
